Barilla Orecchiette Arrabbiata with Calamari and Citrus Garlic Bread Crumbs

This simple Italian fisherman’s seafood pasta is quick and finished with a restaurant-style crumb topping.

Instructions

Step 1

For Bread Crumb Topping: Heat oil, panko and garlic in large skillet on medium heat, stirring frequently until golden brown and crunchy. Remove pan from heat; stir in zest and parsley. Transfer to bowl; cool.

Step 2

Bring salted water to a boil in steam-jacketed kettle or large stockpot on stovetop. Add pasta; cook 1 min. less than directed on package. Drain.

Step 3

Meanwhile, heat oil in large rondeaux on medium-high heat. Add onion, garlic and spices; sweat 3-5 min. or until translucent. Add orange juice and wine; cook until most liquid is evaporated.

Step 4

Add tomatoes; reduce heat to medium. Cook 15-20 min. or until thickened, stirring occasionally. Season to taste with salt and pepper.

Step 5

Stir in calamari; cook 3 min. or until cooked through. Add pasta; toss to coat.

Step 6

Serve garnished with prepared Bread Crumb Topping and fresh herbs.

  • 4 cloves garlic, minced
  • 1 tbsp red pepper flakes
  • 1 tbsp smoked paprika
  • 2 cups blood orange juice
  • 2 cups dry white wine
  • 1 gallon canned, peeled, seeded San Marzano tomatoes, crushed by hand
  • 4 lbs. calamari, cleaned, sliced into ½-inch rings and tentacles
  • ½ cup loosely packed basil leaves, chiffonade
  • ½ cup loosely packed basil leaves, chiffonade
