Joe’s Spaghetti Scramble2018-01-17
Cook pasta according to package directions. Drain and keep warm.
Heat olive oil in large sauté pan over medium high heat. Add onions and sauté for two minutes until onions are soft.
Add sausage and sauté for another minute.
Add spinach and sauté until wilted.
Add eggs and cook until soft.
Add spaghetti into egg mixture and season with Kosher salt and black pepper and finish cooking eggs until hard.
Serve immediately or hold above 140 ºF.
- 6 Lbs 4 oz Whole Grain Spaghetti, Barilla
- 1 cup Olive Oil
- 11 Lbs 8 oz Onions, Diced
- 3 Lbs Cooked Crumbled Italian Sausage
- 6 Lbs 4 oz Spinach
- 1.5 gal Liquid Eggs
- ½ cup Kosher Salt
- ½ cup Black Pepper
