Orecchiette Pugliese with Broccoli Rabe and Sausage2018-06-04

The classic Italian combination of sausage and broccoli rabe makes this quick main dish hearty and flavorful.
Bring salted water to boil in 2 steam-jacketed kettles or large stockpots on stove top. Add pasta to one pot; cook 2 min. less than directed on package. Drain; reserving 1-1/2 cups cooking water.
Add baking soda to remaining pot; cook broccoli rabe 7-9 min. or until tender-crisp. Shock broccoli rabe in ice water; drain well. Chop coarsely into bite-size pieces.
Meanwhile, heat 2 tablespoons oil in large rondeau on medium-high heat. Add sausage; cook 7-10 min. or until cooked through, breaking up the meat into smaller crumbles. Add garlic and red pepper flakes; cook 2-3 min. or until garlic starts to soften.
Stir in pasta and broccoli rabe; toss to coat adding pasta water as needed.
Garnish with cheese and remaining olive oil before serving.

- 3 bunches broccoli rabe, trimmed
