Orzo with Fresh Ricotta and Orange Blossom Honey

This sweet orzo was served as a breakfast item at The Flavor Experience 2016. You can make it healthier by eliminating or reducing the sugar when cooking the orzo, and/or using a more natural sugar. And of course, the fruit can change with the seasons.

Instructions

Step 1

Cook the Barilla® pasta in 3 qts water and the sugar for 1 minute less than the time indicated on the package. Drain pasta and spread it flat on sheet trays or hotel pans to cool slightly.

Step 2

Mix warm orzo with the ricotta and serve warm, drizzled with honey and topped with orange supremes and extra-virgin olive oil.

  • 1 1/2 lb. Barilla Orzo
  • 3 cups sugar
  • 6 lb. fresh ricotta
  • Orange blossom honey
  • 6 oranges, cut in supremes
  • Sicilian extra-virgin olive oil
