    Instructions

    Step 1

    Cook the Barilla® pasta for half the time indicated on the package. Drain pasta and drizzle with some olive oil to prevent from sticking. Place pasta flat on sheet trays or hotel pans and cool in a blast chiller.

    Step 2

    Alternatively, cool it down in a walk-in cooler. Store in zip lock bags or sealed plastic container; refrigerate and use within several hours.

    Step 3

    For each serving, to order: Heat 1 Tbsp. oil in a saute pan until hot. Add 1 1/2 cloves garlic and cook for 1 minute until translucent.

    Step 4

    Add 5 oz. broccoli rabe and saute for 1 minute. Add 2 1/2 cups pasta, and about 1 1/2 oz. each lima beans and peas. Cook for 2 minutes, until heated through. Toss with 1 oz. Parmesan and 1 Tbsp. basil and add salt and pepper to taste. Plate and sprinkle with additional Parmesan.
