Roasted eggplant adds an earthiness to this vegetarian Sicilian sauce that is fragrant with herbs.

    Instructions

    Step 1

    Cook the Barilla® pasta for half the time indicated on the package. Drain pasta and drizzle with some olive oil to prevent from sticking. Place pasta flat on sheet trays or hotel pans and cool in a blast chiller. Alternatively, cool it down in a walk-in cooler. Store in zip lock bags or sealed plastic container; refrigerate and use within several hours.

    Step 2

    Spread the eggplant in single layers on sheet pans. Drizzle with oil and season with salt and pepper. Roast in a 475°F until soft and golden, about 20 minutes.

    Step 3

    Heat the oil in a rondeau until smoking Add the onions and garlic and cook until soft but not browned. Add the tomatoes, basil, and thyme; bring to a boil. Simmer until the tomatoes are broken down. Season with salt and pepper. Add the eggplant and 1 qt. water and simmer until the flavors come together. Remove from the heat and cool in batches.

    Step 4

    For each serving, to order: Reheat 1 1/3 cups pasta with about 1 cup sauce. Plate and garnish with 2 to 3 Tbsp. cheese, 1 tsp. parsley, mint, chili flakes, and additional basil. Drizzle with olive oil and serve.
