Three different fresh mushrooms–plus porcini mushroom powder–make this a mushroom-lover’s dream. Sweet onions and shallots balance the mushrooms, and pepper flakes add a hint of spice.



    Step 1

    Cook the Barilla® pasta for half the time indicated on the package. Drain pasta and drizzle with some olive oil to prevent from sticking. Place pasta flat on sheet trays or hotel pans and cool in a blast chiller. Alternatively, cool it down in a walk-in cooler. Store in zip lock bags or sealed plastic container; refrigerate and use within several hours.

    Step 2

    Heat the oil in a large pan. Add the garlic and shallots and cook for 2 minutes. Add the onion and cook until translucent. Add the mushrooms and porcini powder and cook to release some of the liquid from the mushrooms. Deglaze the pan with the wine and stir in the pepper flakes and butter. Season with salt and set aside.

    Step 3

    For each serving, to order: Reheat 1 cup pasta in simmering water. Drain and add it to a pan with some of the mushroom sauce. Add more oil or butter if needed. Heat through and plate. Garnish with Grana cheese.
