Pasta Spring Salad

Crunchy radishes and cucumber and colorful greens make this a lively cold salad.

Ingredients

  • 3 lbs. rotini or Piccolini farfalle
  • 25 oz. halved, seeded, and sliced cucumbers
  • 1 1/2 lbs. trimmed, thinly sliced red radishes
  • 6 cut in 1/2-inch dice avocados
  • 1 lb. sliced red bell peppers
  • 1 lb. sliced yellow bell peppers
  • 3 heads cut into 1 1/2-inch pieces radicchio
  • 6 heads sliced into 1-inch pieces Belgian endive
  • 12 oz. Spring mix lettuce
  • 7 oz. finely diced red onions
  • 7 oz. halved cherry tomatoes, red and yellow
  • 7 oz. julienned fresh basil
  • 6 oz. chopped fresh parsley
  • 5 oz. chopped fresh cilantro
  • 12 oz. vinaigrette, such as sun-dried tomato, Greek, or champagne
  • 6 oz. extra-virgin olive oil
  • 3 oz. balsamic vinegar

Instructions

Step 1

Cook Barilla® pasta according to package directions. Drain pasta and rinse under cool water to chill.

Step 2

Toss the cucumbers, radishes, avocados, peppers, radicchio, endive, lettuce, onions, tomatoes, and herbs with the pasta.

Step 3

Whisk together the vinaigrette, vinegar, and oil and taste for seasoning.Toss with the pasta. Cover and refrigerate until needed.

Step 4

Note: For a fresher presentation, dice ¼ avocado and mix in, or top a 3-cup portion of salad to order.
Serve immediately.
