Pasta With Shrimp, Scallops And Asparagus

A quick saute of fresh seafood pairs beautifully with crisp-tender asparagus and a tomato cream sauce.

Ingredients

  • 3 lbs. Barilla® pasta
  • 1 cup olive oil
  • 12 oz. diced red onions
  • 3 Tbsp. minced garlic
  • 1 1/2 qts. diced tomatoes
  • 3 cups 75 heavy cream
  • 1 1/2 cups white wine
  • 1 1/2 cups tomato juice
  • 3 lbs. cleaned, cut in 1/2-inch pieces asparagus
  • 1 1/2 lbs. peeled and deveined small shrimp
  • 1 1/2 lbs. bay scallops
  • 3 3/4 oz. chopped fresh parsley
  • 2 1/4 oz. chopped fresh cilantro
  • 1 oz. julienned fresh basil
  • As needed grated Parmesan cheese

Instructions

Step 1

Cook the Barilla® pasta for half the time indicated on the package. Drain pasta and drizzle with some olive oil to prevent from sticking. Place pasta flat on sheet trays or hotel pans and cool in a blast chiller. Alternatively, cool it down in a walk-in cooler. Store in zip lock bags or sealed plastic container; refrigerate and use within several hours.

Step 2

Sauté the onions and garlic in the oil until translucent. Add the tomatoes, cream, wine, and tomato juice and let simmer for 4 to 5 minutes. Season to taste with salt and pepper. Remove from the heat and refrigerate until needed.

Step 3

For each serving, to order: Heat 2 teaspoons of oil in a pan and add 2 oz. asparagus, 1 oz. shrimp, and 1 oz. scallops. Sauté briefly, until the shrimp are half cooked. Add 5 oz. of the sauce, 1 cup pasta, and a generous ¼ cup of mixed parsley, cilantro, and basil. Bring just to a simmer and taste for seasoning. Plate and top with grated Parmesan.
