Protein+™ Rotini With Edamame

Earthy wild mushrooms and fresh tarragon complement bright green edamame. Red bell pepper adds color to this creamy sauce. Recipe courtesy Herlan Manurung, Café & Market @ Crossroads, RIT.
Cook the Barilla® pasta for half the time indicated on the package. Drain pasta and drizzle with some olive oil to prevent from sticking. Place pasta flat on sheet trays or hotel pans and cool in a blast chiller. Alternatively, cool it down in a walk-in cooler. Store in zip lock bags or sealed plastic container; refrigerate and use within several hours. For each serving, to order: Heat a saute pan with 1 1/2 tsp oil and caramelize 1 oz pearl onions. Add 1 oz edamame, 1 oz each morel and porcini mushrooms, and 1/2 oz bell pepper. Stir until the mushrooms are tender In another saute pan, heat 1 1/2 tsp oil and cook 1/2 oz Vidalia onions and 1/2 tsp tarragon until the onions are translucent. Add 1/8 tsp garlic and stir. Add 2 Tbsp champagne and 3 oz cream and simmer until the liquid is reduced by half. Add 1 cup pasta and the edamame mixture to the cream sauce and season with salt and pepper. Stir for a minute until the sauce thickens. Plate and garnish with 1/2 oz Asiago.Ingredients
