Whole Grain Penne With Sausage And Black Truffle

Fresh black truffle and truffle oil enhance this rich, creamy sauce.

Ingredients

  • 3.3 lbs. Barilla Whole Grain Penne
  • 1 1/4 cups extra-virgin olive oil
  • 4 minced garlic cloves
  • 4 oz. chopped winter black truffle
  • 4 cups diced onion
  • 4 lbs. Italian sausage
  • 2 cups white wine
  • 2 cups heavy cream
  • as needed salt
  • as needed pepper
  • as needed black truffle oil
  • 2 cups grated Pecorino cheese
  • 4 Tbsp. minced fresh parsley

Instructions

Step 1

Cook the Barilla® pasta for half the time indicated on the package. Drain pasta and drizzle with some olive oil to prevent from sticking. Place pasta flat on sheet trays or hotel pans and cool in a blast chiller. Alternatively, cool it down in a walk-in cooler. Store in zip lock bags or sealed plastic container; refrigerate and use within several hours.

Step 2

In a skillet, warm 1 cup of the oil with the garlic and chopped truffle, making sure it never boils. Let cool and strain.

Step 3

For each serving, to order: Heat 1/2 tsp. oil and saute 2 to 3 Tbsp. onions until slightly opaque. Add 2 1/2 oz. sausage and brown well, breaking up any large chunks. Deglaze with 1 Tbsp. wine. Reduce briefly, then add 1 Tbsp. cream. Season with salt, pepper, and a couple of drops of truffle oil.

Step 4

Reheat 1 1/3 cups pasta in simmering water. Drain and add to the sauce with enough liquid to make a creamy sauce. Stir in 1 1/3 Tbsp. pecorino and 1/2 tsp. parsley. Plate and drizzle with 2 tsp. of the infused garlic oil.
